Program Description:
Focus on Morocco’s culinary traditions, herbs, spices, and specialties from the Southwest. Includes academic readings, homestays, and basic language instruction (recommended but not required).

Itinerary
Day 1 – Agadir: Arrival, orientation, language instruction, welcome dinner with host families
Day 2 – Agadir: Language class, seminar on food & culture, market tour, Tajine Challenge, communal oven visit
Day 3-4 – Agadir & Amskroud: Visit argan oil cooperative, presentation on production, port visit, seminar on fishing economies, harira cooking
Day 5-6 – Agadir: Tea-making at youth center, couscous & hand-rolling activity
Day 7 – Agadir: Exchange with local students, collaborative cooking with Moroccans & Americans, closing dinner
