If you’re currently “down under,” chances are you may be celebrating ANZAC Day today. It’s a day to honor and celebrate soldiers who fought and died for their countries — much like Memorial Day in the United States. Our fantastic Social Media and Marketing Intern, Christine, studied abroad in Australia and wrote the following guest post about her experience and a little history of the holiday:

“ANZAC day is celebrated on April 25th because marks the anniversary of the first major military action fought by the ANZAC forces during the the first world war, in Gallipoli, Turkey. It is believed that ANZAC Biscuits were sent to deployed soldiers as a comforting treat while they were away from their family, as they transport well and don’t spoil quickly.

Making ANZAC biscuits is a great way to celebrate ANZAC day even if you are located on the other side of the world. The recipe below was provided by Saphiye Davis, my roommate from when I studied abroad in Australia. We lived with two other roommates, another Australian and an American. Saphiye has always been a wonderful cook and we would always look forward to when she was cooking dinner or making us treats. I wanted to share this recipe with you as a fun way for you to celebrate from home!”

Ingredients

1/2 cup butter 1 cup rolled oats
2 tbs golden syrup** 1 cup dried coconut flakes
1 tsp baking soda 1 cup flour
2 tbs boiling water 1 cup brown sugar

**Golden syrup can be found at your local supermarket in the baking or international isle. If you are unable to find it you can combine two parts light corn syrup with one part molasses or equal part honey and corn syrup.

Directions:

  1. Pre-heat oven to 300º F
  2. Mix baking soda with the boiling water in a small bowl and set aside
  3. Melt butter and golden syrup in a saucepan. Add baking soda mixture
  4. Combine all Dry Ingredients in a large bowl. Add liquids from the saucepan. Mix dough to a firm but moist consistency

BAKING TIP: If the dough appears to be too dry add hot water and golden syrup one tablespoon at a time until the proper consistency is achieved.

  1. Drop rounded teaspoons of dough onto a greased cookie sheet. Slightly flatten dough with fingers by lightly pressing down.
  2. Bake for 15 – 20 minutes (Less time equals a chewier cookie; more time for a crunchier cookie).
  3. Eat and enjoy with a glass of milk or cup of tea!
